Our version of the traditional éclair. In this case we have a dry raspberry and lychee meringue, covered in strawberry and almond chocolate.

Éclair: Long pastry made of choux dough filled with cream and topped with chocolate icing on top. The word means“flash of lighting” in French, as they are eaten so quickly (in a flash of lightning).

Dry meringue: Technique invented at el Bulli. A very light meringue which has 3 times less sugar than the traditional French meringue, very light and not sweet at all.

Allergies: dairy.
